Veggie Omelet

One of my favorite ways to fill up in the morning as with a vegetable omelet. There isn’t a precise recipe here I like to just sauté some vegetables. Whatever I have on hand that sounds good. To simplify it I usually just chop up a bunch of vegetables at the beginning of the week when I’m done putting groceries away. I keep them in mason jars.

 

To make:

Get a small handful of veggies in a pan and cook for five minutes (I really like asparagus and spinach or red peppers and onions). Set the veggies aside.

Add 2 whisked eggs to pan. Flip once.

Add the veggies and maybe some dairy free or organic cheese shreds to the egg. Flip over half and plate.

Top with microgreens.

Serve with fresh berries and enjoy!

 

Be clear, be confident and don’t overthink it. The beauty of your story is that it’s going to continue to evolve and your site can evolve with it. Your goal should be to make it feel right for right now. Later will take care of itself. It always does.
